Ingredients:

Prepare Kafta:

  • Pyaz (Onion) 1 small
  • Shimla mirch (Capsicum) cubes 1 small
  • Fresh parsley 1 Cup
  • Lehsan (Garlic) chopped ½ tbs
  • Beef qeema (Mince) ½ kg (with 10% fat)
  • Namak (Salt) 1 tsp or to taste
  • Zeera powder (Cumin powder) 1 tsp
  • Kali mirch powder (Black pepper powder) 1 tsp
  • Dhania powder (Coriander powder) 1 tsp
  • Sumac powder 2 tsp
  • Seven spices 1 tsp
  • Cooking oil 2 tbs

Prepare Hummus:

  • Safed chanay (Chickpeas) boiled 2 & ½ Cups
  • Lehsan (Garlic) sliced 3-4 cloves
  • Tahini 5-6 tbs
  • Namak (Salt) ¼ tsp or to taste
  • Zeera powder (Cumin powder) ½ tsp
  • Olive oil 2 tbs
  • Lemon juice 2-3 tbs
  • Crushed ice 2-3 cubes
  • Olive oil
  • Sumac powder

Prepare Quick Tabbouleh:

  • Kheera (Cucumber) peeled & diced 1 Cup
  • Tamatar (Tomatoes) diced 1 Cup
  • Pickled cucumber diced ½ Cup
  • Lehsan (Garlic) chopped ½ tbs
  • Fresh parsley chopped ½ Cup
  • Podina (Mint leaves) chopped ½ Cup
  • Namak (Salt) to taste
  • Kali mirch (Black pepper) crushed to taste
  • Lemon juice 1 tbs
  • Olive oil 2 tbs
  • Feta cheese cubes ¼ Cup

Prepare Tzatziki Sauce:

  • Dahi (Yogurt) hung 1 Cup
  • Kheera (Cucumber) grated with skin & squeezed 1 Cup
  • Lehsan (Garlic) chopped 1 tsp
  • Podina (Mint leaves) chopped 2-3 tbs
  • Namak (Salt) ¼ tsp or to taste
  • Lemon juice 1 tbs
  • Olive oil 2 tbs

Assembling:

  • Kheera (Cucumber)
  • Black & green olives
  • Cherry tomatoes
  • Pita bread toasted
  • Pickled cucumber
  • Fresh parsley
  • Lemon slices
  • Crackers
  • Badam (Almonds)

Directions:

Prepare Kafta:

In a chopper,add onion,capsicum,fresh parsley,garlic & chop well.

Add beef mince,salt,cumin powder,black pepper powder,coriander powder,sumac powder,seven spices & chop until well combined & refrigerate for 30 minutes.

Grease hand with cooking oil,take out small quantity of beef mixture (40g),make a smooth ball & skew on wooden skewers (makes 16-18).

Heat cast iron grill pan,add cooking oil & grill kafta on medium flame until done (8-10 minutes).

Prepare Hummus:

In a chopper,add boiled chickpeas,garlic,tahini,salt,cumin powder & blend well.

Add olive oil,lemon juice,crushed ice & blend until well combined.

Take out in a dish,add olive oil,sprinkle sumac powder & set aside.

Prepare Quick Tabbouleh:

In a bowl,add cucumber,tomatoes,pickled cucumber,garlic,fresh parsley,mint leaves,salt,black pepper crushed,lemon juice,olive oil,mix & toss well.

Add feta cheese,mix well & set aside.

Prepare Tzatziki Sauce:

In a bowl,add yogurt,cucumber,garlic,mint leaves,salt,lemon juice,olive oil & whisk well.

Assembling:

On a large serving board,place prepared hummus,tabbouleh,cucumber,black & green olives,cherry tomatoes,pita bread,kafta kabab,pickled cucumber,tzatziki sauce,pita bread,fresh parsley,lemon slices,crackers,almonds & serve with 7up!
