Ingredients:

Prepare Dough:

-Safed atta (White flour) sifted 2 Cups

-Maida (All-purpose flour) sifted 1 Cup

-Namak (Salt) 1 tsp or to taste

-Sugar powdered 2 tsp

-Dahi (Yogurt) whisked ¼ Cup

-Lukewarm water 1 Cup or as required

-Olper’s Tarrka desi ghee melted 1 tbs

-Olper’s Tarrka desi ghee melted 1 tsp

Prepare Potato Filling:

-Aloo (Potatoes) boiled ½ kg

-Lal mirch (Red chilli) crushed 1 tsp

-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs

-Zeera (Cumin seeds) roasted & crushed 1 tbs

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Ajwain (Carom seeds) crushed 1 tsp

-Chaat masala 1 tsp

-Namak (Salt) 1 tsp or to taste

-Baisan (Gram flour) roasted 2 tbs

-Hari mirch (Green chilli) chopped 1 tbs

-Hara dhania (Fresh coriander) chopped 1-2 tbs

-Podina (Mint leaves) chopped 1-2 tbs

-Olper’s Cheddar cheese as required

-Olper’s Mozzarella cheese as required

-Olper’s Tarrka desi ghee melted

-Olper’s Mozzarella cheese as required

-Olper’s cheddar cheese as required

-Lal mirch (Red chilli) crushed

-Hara dhania (Fresh coriander) chopped

 

Directions:

Prepare Dough:

-In a bowl,add white flour,all-purpose flour,salt,sugar & mix well.

-Add yogurt,gradually add lukewarm water,mix well & knead until dough is formed.

-Add desi ghee & knead dough again.

-Grease with desi ghee,cover & let it rest for 15 minutes.

Prepare Potato Filling:

-In a bowl,add potatoes & mash well with the help of masher.

-Add red chilli crushed,coriander seeds,cumin seeds,red chilli powder,carom seeds,chaat masala, salt,gram flour,green chilli,fresh coriander,mint leaves & mix until well combined.

-Grate cheddar cheese & mozzarella cheese,mix them both & spread on a clean working surface.

-Now take a potato filling (100g) & mix with cheeses then make a smooth ball.

-Knead dough again until smooth,take a small dough (140g),make a ball & spread with the help of fingers.

-Place prepared potato & cheese ball in the center of the dough,fold all sides & seal properly.

-Press the dough,sprinkle dry flour,prick with skewer & roll out dough with the help of rolling pin.

-On heated griddle,place paratha & fry from both sides with desi ghee.

-On one side of paratha,add grated mozzarella cheese & cheddar cheese,sprinkle red chilli crushed, fresh coriander & flip the other side of paratha over it & cook from both sides until cheese melts (makes 6-7).

-Cut into pieces & serve!
