Mutton Yakhni Soup

Ingredients:

  • Zeera (Cumin seeds) 1 tsp
  • Laung (Cloves) 4-5
  • Sabut dhania (Coriander seeds) ½ tbs
  • Sabut kali mirch (Black peppercorns) 1 tsp
  • Badi elaichi (Black cardamom) 1
  • Darchini (Cinnamon sticks) 2
  • Tez patta (Bay leaf) 2
  • Cooking oil 3-4 tbs
  • Pyaz (Onion) sliced 1 medium
  • Mutton with bones ½ kg
  • Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
  • Haldi powder (Turmeric powder) ½ tsp
  • Himalayan pink salt 1 & ½ tsp or to taste
  • Dahi (Yogurt) whisked ¼ Cup
  • Water 1.5 litre
  • Water 1-2 Cups
  • Kali mirch (Black pepper) crushed

Directions:

In mortal & pestle,add cumin seeds,cloves,coriander seeds,black peppercorns,black cardamom, cinnamon sticks,bay leaves & crush well.

On muslin cloth,add crushed spices & tie to make a potli & set aside.

In a pot,add cooking oil,onion & fry until light golden.

Add mutton & mix well until it changes color.

Add ginger garlic paste,turmeric powder,pink salt,mix well & cook for 1-2 minutes.

Add yogurt,mix well & cook until oil separates.

Add water,spices potli & bring it to boil,cover & cook on low flame for 60-90 minutes.

Remove potli,add water,mix well & bring it to boil,let it simmer for few minutes until oil appears on the top.

Sprinkle black pepper crushed & serve!
