Chicken Chutney Paratha

Prepare Dough:

-Fine atta (Fine flour) sifted 3 & ½ Cups

-Namak (Salt) 1 tsp or to taste

-Sugar powdered 1 tbs

-Cooking oil 2 tbs

-Lukewarm water 1 & ½ Cup or as required

-Cooking oil 2 tsp

Prepare Chicken Filling:

-Cooking oil 3-4 tbs

-Pyaz (Onion) chopped 1 medium

-Chicken qeema (Mince) ½ kg

-Tamatar (Tomatoes) chopped ½ Cup

-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp

-Namak (Salt) ½ tsp or to taste

-Lal mirch (Red chilli) crushed 1 tsp

-Haldi powder (Turmeric powder) ½ tsp

-Chicken powder 1 & ½ tsp

-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp

-Lemon juice 1 & ½ tbs

Prepare Chutney:

-Podina (Mint leaves) 1 Cup

-Hara dhania (Fresh coriander) 1 Cup

-Lehsan (Garlic) 4-5 cloves

-Nariyal (Coconut) cubes 1 Cup

-Hari mirch (Green chillies) 8-10

-Lemon juice 1 & ½ tsp

-Namak (Salt) ½ tsp or to taste

-Water ½ Cup

-Cooking oil for frying



Prepare Dough:

-In a bowl,add fine flour,salt,sugar & mix well.

-Add cooking oil & mix well until it crumbles.

-Gradually add lukewarm water & mix well,cover and let it rest for 5 minutes then knead until dough is formed.

-Grease with cooking oil,cover & let it rest for 15 minutes.

Prepare Chicken Filling:

-In a wok,add cooking oil,onion & sauté until translucent.

-Add chicken mince & mix well until it changes color.

-Add tomatoes,ginger garlic paste,salt,red chilli crushed,turmeric powder,chicken powder,Kashmiri red chilli powder,lemon juice,mix well,cover & cook on low flame for 7-8 minutes then cook on medium flame until it dries up.

-Let it cool.

Prepare Chutney:

-In a blender jug,add mint leaves,fresh coriander,garlic,coconut,green chillies,lemon juice,salt & water,blend well to make a thick paste & set aside.

-Sprinkle dry flour & knead dough again until smooth.

-Take a small dough (90g),bake a ball,dust dry flour & roll out with the help of rolling pin & set aside.

-Take another dough ball,sprinkle dry flour & roll out with the help of rolling pin.

-Add & spread prepared chutney,prepared chicken filling & place rolled dough over it,pinch & seal properly.

-Prick paratha with wooden skewer to remove air bubbles.

-On heated griddle,place stuffed paratha,add cooking oil & cook from both sides until done (makes 5-6).

-Serve chicken chutney paratha with prepared chutney!
