Malai Tikka Boti Bite

Ingredients:

-Lehsan (Garlic) cloves 8-10

-Adrak (Ginger) 3-inch piece

-Hari mirch (Green chillies) 7-8

-Hara dhania (Fresh coriander) chopped 2-3 tbs

-Water 3-4 tbs

-Sirka (Vinegar) 3 tbs

-Namak (Salt) 1 tsp or taste

-Water 4 Cups (enough to dip chicken)

-Boneless chicken cubes 750g

-Olper’s Dairy Cream 1/3 Cup

-Dahi (Yogurt) hung 3 tbs

-Safed mirch powder (White pepper powder) ½ tsp

-Kali mirch powder (Black pepper powder) ½ tsp

-Zeera powder (Cumin powder) 1 tsp

-Namak (Salt) 1 tsp or to taste

-Cornflour ½ tbs

-Lemon juice 2-3 tbs

-Cooking oil 3-4 tbs

-Koyla (Charcoal) for smoke

Creamy Garlic Sauce:

-Olper’s Dairy Cream ¼ Cup

-Cream cheese 3 tbs

-Kali mirch (Black pepper) finely crushed ½ tsp

-Lehsan powder (Garlic powder) ½ tsp

-Namak (Salt) ¼ tsp or to taste

 

Directions:

-In spice mixer,add garlic,ginger,green chillies,fresh coriander,water & blend well.

-Reserve 1 tbs for later use,in a bowl,add remaining paste,vinegar,salt,water & mix well.

-Add chicken and mix well,cover & marinate for 1 hour then strain chicken from marination with the help of strainer & let it strain for 10 minutes.

-In a bowl,add cream,yogurt,1 tbs reserved green paste,white pepper powder,black pepper powder,cumin powder,salt,cornflour,lemon juice & whisk well.

-Add strained chicken and mix well,cover & marinate for 2 hours.

-Thread marinated chicken on wooden skewers (makes 12 chicken skewers).

-In a frying pan,add cooking oil & shallow fry chicken skewers on medium flame from all sides for 2-3 minutes,cover & cook on low flame for 4-5 minutes then fry from all sides until golden brown.

-Give coal smoke for 2 minutes & set aside.

Prepare Creamy Garlic Sauce:

-In a bowl,add cream,cream cheese,black pepper crushed,garlic powder,salt,mix well & transfer to a squeeze bottle.

-Drizzle creamy garlic sauce over malai tikka bites,sprinkle fresh coriander & serve with puri paratha, green chutney & onion rings.
