Vegetable Jalfrezi

Ingredients:

  • Cooking oil 2 tbs
  • Makhan (Butter) 2 tbs
  • Zeera (Cumin seeds) ½ tbs
  • Lehsan (Garlic) crushed 1 tbs
  • Adrak (Ginger) crushed 1 tbs
  • Hari mirch (Green chillies) 3-4
  • Pyaz (Onion) sliced 1 large
  • Tomato puree ¼ Cup
  • Tomato ketchup 2-3 tbs
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Kali mirch powder (Black pepper powder) ½ tsp
  • Zeera powder (Cumin powder) 1 tsp
  • Haldi powder (Turmeric powder) ¼ tsp
  • Namak (Salt) 1 tsp or to taste
  • Dhania powder (Coriander powder) 1 tsp
  • Paprika powder 1 tsp
  • Water ½ Cup or as required
  • Fauji Fresh n Freeze Frozen aloo,matar,gajar 500g
  • Shimla mirch (Capsicum) deseeded & cubes 1 medium
  • Tamatar (Tomato) deseeded & cubes 1 medium
  • Garam masala powder 1 tsp
  • Kasuri methi (Dried fenugreek leaves) ½ tbs
  • Hara dhania (Fresh coriander) chopped 2-3 tbs

Directions:

In a wok,add cooking oil,butter & let it melt.

Add cumin seeds and mix.

Add garlic,ginger,mix well & cook for a minute.

Add green chillies,onion & sauté for a minute.

Add tomato puree,tomato ketchup & mix well.

Add red chilli powder,black pepper powder,cumin powder,turmeric powder,salt,coriander powder, paprika powder,mix well & cook on low flame until oil separates (1-2 minutes).

Add water,mix well & bring it to boil.

Add frozen aloo,matar,gajar and mix well,cover & cook on low flame for 4-5 minutes.

Add capsicum,tomato & mix well.

Add garam masala powder,dried fenugreek leaves,fresh coriander & mix well.

Serve with chapati.
