Fried Egg Salsa With

Ingredients:

  • Onion 1 thinly chopped
  • Green Chilies 1-2 thinly chopped
  • Tomato 1 thinly chopped
  • Spinach (Handful) chopped
  • Green Onion 1 chopped
  • Salt (To Taste)
  • Turmeric 1 Tea spoon
  • Red Chili Powder 1 tablespoon
  • Eggs 5
  • Cooking Oil

Directions:

In a frying pan heat oil.

Add onion and fry until light golden brown.

Add tomato and green chilies, green onions, spinach and mix well.

Add all the spices including salt, turmeric, red chilies and fry for 2-3 minutes.

With the help of spatula make 5 wells in the mixture and add 5 eggs.

Sprinkle black pepper and cover. Let it cook in steam for 5-6 minutes until eggs are done.

In the end garnish it with coriander leaves.
