1: Noodles with Leftover Roti:

Ingredients:

-Leftover roti 2-3

-Cooking oil 2 tbs

-Lehsan (Garlic) chopped 1 tbs

-Gajar (Carrot) julienne 1 medium

-Shimla mirch (Capsicum) julienne 1 medium

-Pyaz (Onion) julienne 1 medium

-Band gobhi (Cabbage) shredded 1 Cup

-Himalayan pink salt 1 tsp or to taste

-Kali mirch (Black pepper) crushed 1 tsp

-Safed mirch powder (White pepper powder) ½ tsp

-Chilli garlic sauce 2 tbs

-Soy sauce 1 tbs

-Hot sauce 1 tbs

-Sirka (Vinegar) 1 tbs

-Hara pyaz (Spring onion) leaves chopped

 

Directions:

-Cut leftover rotis in thin long strips & set aside.

-In a wok,add cooking oil,garlic & sauté for a minute.

-Add carrots,capsicum,onion,cabbage & sauté for a minute.

-Add pink salt,black pepper crushed,white pepper powder,chilli garlic sauce,soy sauce,hot sauce, vinegar,mix well & cook on high flame for a minute.

-Add roti noodles & give it a good mix.

-Sprinkle spring onion leaves & serve!

 

2: Leftover Roti Chaat:

Ingredients:

-Leftover roti 2

-Cooking oil 1-2 tbs

-Raidana (Mustard seeds) ½ tsp

-Zeera (Cumin seeds) 1 tsp

-Lehsan (Garlic) chopped 1 tsp

-Hari mirch (Green chillies) sliced 2

-Pyaz (Onion) chopped 1 small

-Haldi powder (Turmeric powder) ½ tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Himalayan pink salt ½ tsp or to taste

-Lal mirch (Red chilli) crushed ½ tsp

-Tamatar (Tomato) chopped ½ Cup

-Band gobhi (Cabbage) 1 Cup

-Kheera (Cucumber) ½ Cup

-Pyaz (Onion) chopped ½ Cup

-Chaat masala 1 tsp or to taste

-Lemon juice 1 tbs

-Nimco sev

-Lemon wedges

 

Directions:

-Cut the leftover roti in small pieces or cubes with the help of knife & set aside.

-In a wok,add cooking oil,mustard seeds,cumin seeds,garlic & sauté for 30 seconds.

-Add green chillies,onion & mix well for a minute.

-Add turmeric powder,red chilli powder,pink salt,red chilli crushed & mix well.

-Add leftover roti pieces,mix well & cook on medium flame for 2-3 minutes.

-Take out in a bowl & let it cool.

-Add tomato,cabbage,cucumber,onion,chaat masala,lemon juice & toss well.

-Garnish with nimco sev,lemon wedges & serve!

 

3: Ladoo with Leftover Roti:

Ingredients:

-Leftover roti 4

-Ghee (Clarified butter) 2 tbs

-Badam (Almonds) chopped 2 tbs

-Kishmish (Black raisins) 2 tbs

-Sukha nariyal (Dried coconut) chopped 2 tbs

-Pista (Pistachios) chopped 2 tbs

-Sugar 4-5 tbs

-Water 2 tbs

-Milk powder 2 tbs

-Elaichi powder (Cardamom powder) 1 tsp

 

Directions:

-On a heated griddle,toast leftover roti on medium flame from both sides (2-3 minutes).

-In a chopper,add roti & chop coarsely.

-Take out in a bowl & set aside.

-In a frying pan,add clarified butter & let it melt.

-Add almonds,black raisins,dried coconut,pistachios & fry for 1-2 minutes.

-In coarsely chopped roti,add fried nuts & mix well.

-In the same frying pan,add sugar,water & cook on low flame until sugar is dissolved & thick syrup is formed.

-Add sugar syrup in the bowl of roti mixture & mix well.

-Add milk powder,cardamom powder & mix well.

-With the help of greased hands,take a mixture,press gently & make laddu of equal sizes.

-Let them set (15 minutes) & serve (makes 12).

 

4: Leftover Roti Nachos:

Ingredients:

-Leftover roti 3 or as required

-Cooking oil for frying

-Cooking oil 1 tbs

 

Directions:

-Cut triangles of leftover roti.

Option # 1: Deep Frying

-In a wok,heat cooking oil & fry roti triangles on medium flame until golden brown & crispy.

-Take out on a strainer & let them rest.

Option # 2 Air Frying

-In an air fryer basket,place roti triangles,add cooking oil & mix well.

-Air fry in preheated air fryer at 180°C until golden brown & crispy (3-4 minutes).

-Serve roti nachos with salsa & dip!
