Shalgam Ka Achar

Ingredients:

  • Paani (Water) as required
  • Shalgam (Turnip) Peeled & sliced 1 kg
  • Adrak lehsan paste (Ginger garlic paste) 1 tbs
  • Namak (Salt) ½ tbs or to taste
  • Lal mirch (Red chili) Crushed 1 tbs or to taste
  • Adrak (Ginger) Julienne 1 inch piece (Optional)
  • Brown sugar 1 tbs
  • Sirka (Vinegar) ¼ cup
  • Rai dana (Mustard seeds) Crushed ¼ cup
  • Lal mirch powder (Red chili powder) 1 tbs or to taste
  • Paani (Water) 3-4 cups boil and bring it to room temperature

Directions:

  • Peel and cut the turnips in thick, round slices.
  • In pot,add water,bring it to boil and turnip slices,boil until ¾ th done,strain and let it cool.
  • In turnips,add ginger garlic paste,salt,red chili crushed,ginger (julienne),brown sugar,vinegar,mustard seeds(crushed),red chili powder,water (boiled) and mix well.
  • Cover tightly with a lid and keep in sunlight for 3-4 days.
  • Turnip pickle is ready to use.
