Pinwheel Shahi Tukray

We brought yet another beautiful fusion to the famous Shahi tukray. This Pinwheel Shahi tukray recipe give a layered flakey feel to the shahi tukras without tempering with the ingredients required for the recipe. Prepare Sugar Syrup:

-Sugar 1 Cup

-Water 1 & ½ Cup

-Lemon juice 1 tsp

-Rose water 1 tsp

-Hari elaichi (Green cardamom) 3-4

-Rose petals 8-10

Prepare Shahi Pinwheel Tukray:

-Bread slices large 10 or as required

-Cooking oil for frying

Prepare Rabri (Creamy Milk):

-Doodh (Milk) 1 Litre

-Sugar ⅓ Cup or to taste

-Elaichi powder (Cardamom powder) ½ tsp

-Badam (Almonds) chopped 1 tbs

-Pista (Pistachios) chopped 1 tbs

-Cream 100ml (room temperature)

-Cornflour 1 & ½ tbs

-Doodh (Milk) 3 tbs

-Pista (Pistachios) sliced

-Rose petals



Prepare Sugar Syrup:

-In a saucepan,add sugar,water,lemon juice,rose water,green cardamom,rose petals & mix well,bring it to boil & cook on medium flame for 8-10 minutes & set aside.

Prepare Shahi Pinwheel Tukray:

-Trim bread edges & flatten the white part of bread with the help of rolling pin or pastry roller (use bread crust to make breadcrumbs & reserve for later use).

-On one side of bread slice apply water with the help of brush & place another slice of bread by joining both the ends.

-Join 5 bread slices in similar pattern in a row then press & seal the joined carefully by water.

-Roll up & cut into 2 cm thick pinwheel slices.

-In a frying pan,heat cooking oil & fry bread pinwheels on low flame until golden & crispy.

Prepare Rabri (Creamy Milk):

-In a wok,add milk & bring it to boil.

-Add sugar,cardamom powder,almonds,pistachios,reserved breadcrumbs (1/4 Cup),mix well & cook on medium flame for 6-8 minutes.

-Turn off the flame,add cream & mix well.

-Turn on the flame,mix well & cook on medium flame for 1-2 minutes.

-In cornflour,add milk & mix well.

-Now add dissolved cornflour in milk,mix well & cook until it thickens & set aside.

-Dip fried bread pinwheels in prepared sugar syrup & set aside.

-In a serving dish,add prepared rabri & place sugar dipped bread pinwheels & pour prepared rabri (creamy milk).

-Garnish with pistachios,rose petals & serve chilled!
