Ingredients:
- Moong daal (Yellow lentil) ½ Cup
- Ajwain (Carom seeds) ½ tsp
- Baisan (Gram flour) sifted 1 Cup
- Lal mirch powder (Red chili powder) 1 tsp or to taste
- Haldee powder (Turmeric powder) ½ tsp
- Pani (Water) ½ Cup or as required
- Rafhan corn oil 1 tbs
- Baking soda 1/4 tsp
- Rafhan corn oil for frying
- Neem garam pani (Lukewarm water) as required
- Namak (Salt) 1 tbs
- Dahi (Yogurt) ½ kg
- Cheeni (Sugar) 4-5 tbs or to taste
- Namak (Salt) 1/4 tsp or to taste
- Cream 4-5 tbs
- Doodh (Milk) ½ Cup
- Imli & gurr ki chutney
- Dahi bara masala to taste
Directions:
In spice mixer,add yellow lentil,carom seeds and grind to a make fine powder & set aside.
In bowl,add garm flour,grinded lentil powder,red chili powder,turmeric powder and mix well.
Gradually add water and whisk well until thick batter is formed.
Add corn oil and whisk well for 2 minutes,cover and let it rest for 15 minutes.
In gram flour mixtrure,add baking soda and whisk well.
In wok,add corn oil and fry phulki on medium low flame until golden brown.
In bowl,add lukewarm water,salt and mix,add fried phulki and let them soaked for 15-20 minutes,take them out,squeeze to remove excess water.
In bowl,add yogurt,sugar,salt,cream,milk and whisk until well combined.
Assembling:
In serving dish,add phulkiyan and pour prepared yogurt,imli & gurr chutney,dahi bara masala & serve.

Spice mixer mein moong daal aur ajwain dal dein aur grind ker ka powder tayyar ker lein & side per rakh dein.
Bowl mein baisan,grinded mong daal powder,lal mirch powder aur haldee powder dal ker ache tarhan mix ker lein.
Thora thora ker ka pani shamil karein aur ache tarhan whisk ker ka thick batter tayyar ker lein.
Corn oil dal dein aur 2 minutes kliya ache tarhan whisk ker lein aur dhak ker 15 minutes kliya rakh dein.
Baisan ka mixture mein baking soda dal ker ache tarhan whisk ker lein.
Karhai mein corn oil dal dein aur phulki ko halki darmiyani ancch per golden brown hunay tak fry ker lein.
Bowl mein neem garam pani mein namak dal ker mix karein,fried phulki dal ker 15-20 minutes kliya bheego dein,phulki ko nikla ker squeeze karein aur excess water nikal lein.
Bowl mein dahi,cheeni,namak,cream aur doodh dal ker ache tarhan whisk ker lein.
Assembling:
Serving dish mein phulkiyan,tayyar dahi,imli & gurr ki chutney aur dahi bara masala dal ker serve karein.
