Ingredients:

Prepare Meethi Chutney:

-Khajoor (Dates) deseeded 15-16

-Water 1 Cup

-Gurr (Jaggery) powdered ½ Cup

-Namak (Salt) ¼ tsp or to taste

-Sonth (Dried ginger powder) ½ tsp

-Ajwain (Carom seeds) ¼ tsp

-Water 1 Cup or as required

-Cornflour 1-2 tsp

-Water 2 tbs or as required

-Chaar maghaz (Melon seeds) 1 tbs

Prepare Hari Chutney:

-Hara dhania (Fresh coriander) 1 Cup

-Podina (Mint leaves) 1 & ½ Cup

-Lehsan (Garlic) 3 cloves

-Hari mirch (Green chillies) 5-6

-Zeera (Cumin seeds) 1 tsp

-Kala namak (Black salt) ½ tsp

-Namak (Salt) ¼ tsp or to taste

-Bread slice 1 small

-Imli paste (Tamarind paste) ½ Cup

-Water ¼ Cup or as required

-Boiling water as required

-Namak (Salt) 1 tbs

-Aloo (Potatoes) peeled ½ kg medium size

-Cooking oil for frying

Assembling:

-Chaat masala

-Dahi (Yogurt) whisked

-Pyaz (Onion) chopped

-Tamatar (Tomato) deseeded & chopped

-Chaat masala

-Lal mirch (Red chilli) crushed

-Chips/Papri

-Hara dhania (Fresh coriander) chopped

 

Directions:

Prepare Meethi Chutney:

-In a saucepan,add dates,water,mix well & bring it to boil,cover & cook on medium flame until soft (5-6 minutes).

-Turn off the flame & blend well with the help of hand blender.

-Add dark jaggery,salt,dried ginger powder,carom seeds,water & turn on the flame,mix well,bring it to boil & cook on medium flame for 3-4 minutes.

-In a bowl,add cornflour,water & mix well.

-Now add dissolved cornflour,mix well & cook until it thickens.

-Add melon seeds & mix well.

-Let it cool.

Prepare Hari Chutney:

-In a blender jug,add fresh coriander,mint leaves,garlic,green chillies,cumin seeds,black salt,salt, bread,tamarind paste & water,blend well & set aside.

-In boiling water,add salt & mix well.

-Cut potatoes in half,add in boiling water,cover & cook on medium flame until 80% done (5-6 minutes),strain & transfer to a bowl,cover & let it rest for 10 minutes.

Option # 1: Deep frying

-In a wok,heat cooking oil & fry boiled potatoes until golden brown.

Option # 2: Air fry

-Air fry in preheated air fryer at 180C for 6-8 minutes.

-On a flat surface,place butter paper & place fried or air fried potato on it.

-Now place another butter paper on it & smash it with the help of patty press.

Assembling:

-On a serving place,add smashed potatoes,chaat masala,prepared hari chutney,yogurt,prepared meethi chutney,onion,tomato,chaat masala,red chilli crushed,chips/papri,fresh coriander & serve!
