Ingredients:

Prepare Gravy:

-Tamatar (Tomato) blanched 3 medium

-Hari mirch (Green chillies) sliced 2

-Lehsan (Garlic) 3 cloves

-Hara dhania (fresh coriander) handful

-Pyaz (Onion) Fried ½ Cup

-Cooking oil ¼ Cup

-Zeera (Cumin seeds) 1 tsp

-Dahi (Yogurt) whisked ½ Cup

-Sabut dhania (Coriander seeds) roasted & crushed 1 tsp

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Iodized Himalayan pink salt 1 tsp or to taste

-Haldi powder (Turmeric powder) ½ tsp

-Zeera (Cumin seeds) roasted & crushed ½ tbs

-Water ½ Cup

-Cream ¼ Cup

-Kasuri methi (Dried fenugreek leaves) 1 tsp

Prepare Vegetable Seekh Kabab

-Pyaz (Onion) 1 medium

-Hara pyaz (Spring onion) 2-3 stalks

-Gajar (Carrot) 1 medium

-Shimla mirch (Capsicum) 1 medium

-Lehsan (Garlic) 5 cloves

-Adrak (Ginger) 1-inch piece

-Hari mirch (Green chillies) 2

-Aloo (Potato) Boiled 500g

-Maida (All-purpose flour) ½ Cup

-Lal mirch (Red chilli) crushed 1 tsp

-Sabut Dhania (Coriander seeds) roasted & crushed 1 tsp

-Iodized Himalayan pink salt ½ tsp or to taste

-Haldi powder (Turmeric powder) ½ tsp

-lal mirch powder (Red chilli powder) 1 tsp or to taste

-Garam masala powder ½ tsp

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Lemon juice 1 tbs

-Hara dhania (Fresh coriander) chopped handful

-Cooking oil (For frying) as required

-Cream as required

-Hara dhania (Fresh coriander) chopped as required

 

Direction:

Prepare Gravy:

-In a blender Jug, add blanched tomato, green chillies, garlic, fresh coriander, fried onion & blend well.

-In a wok, add cooking oil & heat it, add cumin, fry for 30 seconds.

-Add blended mixture & mix well then add yogurt, coriander, red chilli powder, pink salt, turmeric powder, cumin & mix well, then cover & cook on low flame for 6-8 minutes.

-Remove cover add water & mix well.

-Add cream, mix well, add dried fenugreek leaves, cover & cook on low flame for 10-12 minutes.

Prepare Vegetable Seekh Kabab

-In a chopper, add onion, spring onion, carrot, capsicum, garlic, ginger, green chillies, chop coarsely.

-Squeeze out all the excess water from chopped veggies with the help of muslin cloth.

-In a bowl, add boiled potatoes, mash well, with the help of a masher.

-Add chopped veggies, all-purpose flour, red chilli crushed, coriander, pink salt, turmeric powder, red chilli powder, garam masala, cumin, lemon juice, fresh coriander & mix until well combined, seekh kabab mixture is ready.

-With greased hand, take small quantity of mixture (55g) & skew it on metal skewer to make kababs (Makes 12)

-In a wok, add cooking oil, heat it, add kababs, fry on medium flame until golden.

-In a serving platter add vegetable seekh kabab, pour gravy over kabab, garnish with cream & fresh coriander, serve with naan!
