Ingredients:
Prepare Grilled Chicken:
-Chicken with skin 750g
-Water 5 Cups
-Pyaz (Onion) chopped 1 medium
-Lehsan (Garlic) 6-7 cloves
-Adrak (Ginger) 2-inch piece
-Kali mirch powder (Black pepper powder) ½ tsp
-Iodized Himalayan pink salt 1 & ½ tsp or to taste
-Dried thyme 1 tsp
-Curry powder 1 tsp
-Chicken cube 1
-Haldi powder (Turmeric powder) 1 tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Zeera powder (Cumin powder) ½ tsp
-Cooking oil 1 tbs
Prepare Nigerian Jollof Rice:
-Cooking oil 1 tbs
-Red bell pepper cubes ½ Cup
-Pyaz (Onion) 1 small
-Tamatar (Tomato) 1 medium
-Lehsan (Garlic) 8-9 cloves
-Adrak (Ginger) 1-inch piece
-Water 2-3 tbs
-Cooking oil ¼ Cup
-Pyaz (Onion) chopped 1 small
-Tez patta (Bay leaf) 1
-Tomato paste 2 tbs
-Paprika powder ½ tsp
-Iodized Himalayan pink salt 1 tsp or to taste
-Chawal (Rice) sella 500g soaked & boiled with salt
-Fresh parsley chopped
Directions:
Prepare Grilled Chicken:
-In a pot,add chicken,water & bring it to boil,remove scum,add onion,garlic,ginger,black pepper powder,pink salt,dried thyme,curry powder,chicken cube & mix well,cover & cook on low flame for 8-10 minutes.
-Take out chicken pieces & set aside (Reserve stock for later use).
-In a bowl,turmeric powder,pink salt,coriander powder,red chilli powder,cumin powder & mix well.
-In frying pan,add cooking oil,chicken pieces,sprinkle prepared spice mix & grill them on medium flame from both sides until golden & set aside.
Prepare Nigerian Jollof Rice:
-In frying pan,add cooking oil,red bell pepper,onion,tomato,garlic,ginger & cook on high flame for 3-4 minutes.
-Let it cool.
-In a blending jar,add cooked mixture,water,blend well & set aside.
-In a pot,add cooking oil,onion,bay leaf & sauté until translucent.
-Add tomato paste,mix well & cook for a minute.
-Add blended mixture,mix well & cook on medium flame for a minute.
-Add paprika powder,pink salt,mix well & cook until oil separates (2-3 minutes).
-Add rice & mix well.
-Add reserved chicken stock (approx. 3 Cups) & mix well,bring it to boil & cook on high flame until water is reduced (3-4 minutes).
-Cover with kitchen cloth & lid & steam cook on low flame for 10-12 minutes.
-In a serving dish,add cooked rice,grilled chicken,garnish with fresh parsley & serve!

-Ek pot mein chicken aur pani dal kar boil karein aur upar se aane wali jhaag nikaal dein,pyaz,lehsan,adark,kali mirch powder,pink salt,dried thyme,curry powder aur chicken cube dal kar mix karein aur dhak kar low flame par 8-10 minutes pakayein.
-Chicken pieces nikaal lein (stock ko sambhal kar rakh lein).
-Ek bowl mein haldi powder,pink salt,dhania powder,lal mirch powder aur zeera powder dal kar mix karein.
-Frying pan mein cooking oil,chicken pieces aur tayyar spice mix chirak kar golden hone tak medium flame par grill karein & side par rakh dein.
Prepare Nigerian Jollof Rice:
-Frying pan mein cooking oil,red bell pepper,pyaz,tamatar,lehsan aur adrak dal kar high flame par 3-4 minutes tak paka lein.
-Thanda ker lein.
-Blender mein yeh cooked mixture aur pani dal kar achi tarah blend kar lein & side par rakh dein.
-Ek pot mein cooking oil,pyaz aur tez patta dal kar translucent hone tak sauté karein.
-Tomato paste dal kar mix karein aur 1 minute tak paka lein.
-Blended mixture dal kar mix karein aur 1 minute medium flame per paka lein.
-Paprika powder aur pink salt dal kar mix karein aur 2-3 minutes tak oil alag hone tak paka lein.
-Chawal dal ker ache sa mix ker lein.
-Reserved chicken stock (approx. 3 cups) dal kar ache sa mix karein aur ubal anay ka bad high flame par 3-4 minutes tak pani reduce hone dein.
-Kitchen cloth aur lid se dhak kar low flame par 10-12 minutes tak steam cook ker lein.
-Serving dish mein cooked rice,grilled chicken aur fresh parsley dal ker serve karein!
