Mexican Stuffed Peppers

Ingredients:

  • Cream 4 tbs
  • Lemon juice 1 & ½ tbs
  • Cooking oil 2 tbs
  • Pyaz (Onion) chopped 1 medium
  • Lehsan (Garlic) chopped 1 tbs
  • Qeema (Mince) 350g
  • Namak (Salt) 1 tsp or to taste
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Onion powder ½ tsp
  • Lehsan powder (Garlic powder) 1 tsp
  • Zeera powder (Cumin powder) 1 tsp
  • Kali mirch powder (Black pepper powder) ½ tsp
  • Paprika powder 1 tsp
  • Chilli sauce 2 tbs
  • Tomato puree 1 Cup
  • Dried parsley 1 & ½ tsp
  • Yakhni (Stock) 1 Cup or as required
  • Cheddar cheese grated ½ Cup or as required
  • Lal lobia (Red kidney bean) boiled ½ Cup
  • Corn kernels boiled ¾ Cup
  • Chawal (Rice) boiled ½ Cup
  • Shimla mirch (Capsicum) as required
  • Cheddar cheese grated
  • Mozzarella cheese grated
  • Corn kernels boiled
  • Dried parsley
  • Lal mirch (Red chilli) crushed

Directions:

In a bowl,add cream,lemon juice,whisk well and let it rest for 2-3 minutes.Sour cream is ready!

In frying pan,add cooking oil,onion and sauté until translucent.

Add garlic and mix well.

Add mince and mix well until it changes color.

Add salt,red chilli powder,onion powder,garlic powder,cumin powder,black pepper powder,paprika powder,mix well and cook for 1-2 minutes.

Add chilli sauce,tomato puree and mix well.

Add dried parsley,stock and mix well,cover and cook on low flame for 6-8 minutes.

Let it cool.

Add cheddar cheese,red kidney beans,corn kernels,sour cream,rice,mix well & set aside.

Cut capsicum and yellow bell pepper from the center and deseed them.

In baking dish,place capsicum and yellow bell pepper and microwave for 2 minutes.

Stuffed with prepared mince filling and add cheddar cheese,mozzarella cheese,corn kernels,dried parsley and red chilli crushed.

Bake in preheated oven at 180 C until cheese melts (8-10 minutes) & serve!
