Ingredients:
- Cooking oil 1-2 tbs
- Pyaz (Onion) 2 medium
- Adrak (Ginger) 1 inch piece
- Lehsan (Garlic) cloves 7-8
- Tamatar (Tomato) deseeded 1 medium
- Hari mirch (Green chilies) 2-3
- Hara dhania (Fresh coriander) ¼ Cup
- Podina (Mint leaves) 1-2 tbs
- Zeera powder (Cumin powder) 1 tsp
- Namak (Salt) 1 tsp or to taste
- Ajwain (Carom seeds) ½ tsp
- Haldee powder (Turmeric powder) ½ tsp
- Garam masala powder ½ tsp
- Lal mirch powder (Red chili powder) 1 tsp or to taste
- Baisan (Gram flour) sifted ¼ Cup
- Baigan (Brinjal) ½ kg round & small
- Olive oil 2 tbs
- Hara dhania (Fresh coriander) chopped
Directions:
In frying pan,add cooking oil,onion,ginger,garlic and mix well.
Add tomato and cook for 2-3 minutes.
Add green chilies,fresh coriander and mint leaves,mix well & let it cool.
In chopper,add cooked onion mixture,cumin powder,salt,carom seeds,turmeric powder,garam masala powder,red chili powder and chop until well combined.
Add gram flour,mix well & set aside.
Slit brinjals into four halves by keeping them intact towards the stem and stuff with prepared mixture.
In frying pan,add olive oil and place stuffed brinjals,cover and cook on low flame until done (approx. 25-30 minutes) and keep turning sides or flip to cook evenly.
Sprinkle fresh coriander & serve!

Frying pan main cooking oil,pyaz,adrak aur lehsan dal ker ache tarhan mix karein.
Tamatar dal ker 2-3 minutes kliya paka lein.
Hari mirch,hara dhania aur podina dal ker ache tarhan mix karein & thanda ker lein.
Chopper mein cooked pyaz ka mixture,zeera powder,namak,ajwain,haldee powder,garam masala powder aur lal mirch powder dal ker ache tarhan chop ker lein.
Baisan dal ker ache tarhan mix karein & side per rakh dein.
Baigan mein char slit laga lein aur tayyar mixture sa bhar dein.
Frying pan mein olive oil dal ker stuffed baigan rakh dein aur dhak ker halki ancch per pak jana tak paka lein (approx. 25-30 minutes) aur bech bech mein sides tabdeel kertay rahein.
Hara dhania dal ker serve karein.
