Nigerian Jollof Rice with Grilled Chicken

Ingredients:

Prepare Grilled Chicken:  

-Chicken with skin 750g

-Water 5 Cups

-Pyaz (Onion) chopped 1 medium

-Lehsan (Garlic) 6-7 cloves

-Adrak (Ginger) 2-inch piece

-Kali mirch powder (Black pepper powder) ½ tsp

-Iodized Himalayan pink salt 1 & ½ tsp or to taste

-Dried thyme 1 tsp

-Curry powder 1 tsp

-Chicken cube 1

-Haldi powder (Turmeric powder) 1 tsp

-Iodized Himalayan pink salt ½ tsp or to taste

-Dhania powder (Coriander powder) 1 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zeera powder (Cumin powder) ½ tsp

-Cooking oil 1 tbs

Prepare Nigerian Jollof Rice:

-Cooking oil 1 tbs

-Red bell pepper cubes ½ Cup

-Pyaz (Onion) 1 small

-Tamatar (Tomato) 1 medium

-Lehsan (Garlic) 8-9 cloves

-Adrak (Ginger) 1-inch piece

-Water 2-3 tbs

-Cooking oil ¼ Cup

-Pyaz (Onion) chopped 1 small

-Tez patta (Bay leaf) 1

-Tomato paste 2 tbs

-Paprika powder ½ tsp

-Iodized Himalayan pink salt 1 tsp or to taste

-Chawal (Rice) sella 500g soaked & boiled with salt

-Fresh parsley chopped

 

Directions:

Prepare Grilled Chicken:

-In a pot,add chicken,water & bring it to boil,remove scum,add onion,garlic,ginger,black pepper powder,pink salt,dried thyme,curry powder,chicken cube & mix well,cover & cook on low flame for 8-10 minutes.

-Take out chicken pieces & set aside (Reserve stock for later use).

-In a bowl,turmeric powder,pink salt,coriander powder,red chilli powder,cumin powder & mix well.

-In frying pan,add cooking oil,chicken pieces,sprinkle prepared spice mix & grill them on medium flame from both sides until golden & set aside.

Prepare Nigerian Jollof Rice:

-In frying pan,add cooking oil,red bell pepper,onion,tomato,garlic,ginger & cook on high flame for 3-4 minutes.

-Let it cool.

-In a blending jar,add cooked mixture,water,blend well & set aside.

-In a pot,add cooking oil,onion,bay leaf & sauté until translucent.

-Add tomato paste,mix well & cook for a minute.

-Add blended mixture,mix well & cook on medium flame for a minute.

-Add paprika powder,pink salt,mix well & cook until oil separates (2-3 minutes).

-Add rice & mix well.

-Add reserved chicken stock (approx. 3 Cups) & mix well,bring it to boil & cook on high flame until water is reduced (3-4 minutes).

-Cover with kitchen cloth & lid & steam cook on low flame for 10-12 minutes.

-In a serving dish,add cooked rice,grilled chicken,garnish with fresh parsley & serve!
