Ingredients:
Prepare Tikki:
-Chana daal (Split bengal gram) 1 & ¼ Cup (soaked)
-Masoor daal (Red lentil) ¼ Cup (soaked)
-Sabut lal mirch (Button red chillies) 4-5
-Lehsan (Garlic) 4-5 cloves
-Adrak (Ginger) sliced 1-inch piece
-Sabut dhania (Coriander seeds) ½ tbs
-Darchini (Cinnamon stick) 2
-Sabut kali mirch (Black peppercorn) 12-15
-Laung (Cloves) 4-5
-Badi elaichi (Black cardamom) 1
-Zeera (Cumin seeds) 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Iodized Himalayan pink salt 1 tsp or to taste
-Pyaz (Onion) sliced 1 medium
-Water 2 Cups (add more if required)
Assembling Anda Tikki
-Cooking oil 2-3 tbs
-Pyaz (Onion) sliced 1 medium
-Tamatar (Tomato) sliced 1 medium
-Hari mirch (Green chillies) 2
-Water ½ Cup (Add Gradually)
-Lal mirch (Red chilli) crushed 1 tsp
-Iodized Himalayan pink salt ¼ tsp or to taste
-Raita 2 tbs
-Cooking oil 2-3 tbs
-Anday (Eggs) 2
-Hara dhania (Fresh coriander) chopped as required
-Hari mirch (Green chillies) as required
Direction:
Prepare Tikki:
-In a wok, add split lentil gram, red lentil, red button chilli, garlic cloves, ginger, coriander, cinnamon stick, black peppercorn, cloves, black cardamom, onion slices, cumin seeds, turmeric powder, red chilli powder, pink salt, water & bring it to boil.
-Cover & cook on low flame for 25-30 minutes.
-Remove the cover, mix well, cook on high flame until moisture evaporate, discard cinnamon sticks & black cardamom then let it cool completely.
-In a chopper, add daal mixture, chop well & refrigerate for 15-20 minutes.
-Take 50g of tikki mixture, make cylindrical-shaped tikki & set aside. (Makes 15-16 tikkis)
Assembling Anda Tikki
-On a griddle, add cooking oil, onion, tomato, green chillies & mix well then cook on medium flame.
-Add water gradually.
-Add red chilli crushed, pink salt, raita & mix well
-Add cooking oil, mix well & cook on medium flame for 3-4 minutes.
-Add eggs, rest for few seconds then mix well, add prepared tikki (2), mix well & cook on medium flame for 1-2 minutes.
-Garnish with fresh coriander & green chillies, serve with naan & onion rings.

Directions:
Prepare Tikki:
-Wok mein chana daal (split lentil gram), masoor daal (red lentil), sabut lal mirch (red button chilli), lehsan ke jaway, adrak, hara dhania, dalchini ka tukra, kali mirch ke dane, laung, bari elaichi, pyaz ke slices, zeera, haldi powder, lal mirch powder, pink salt aur pani daalein aur ubaal aane den.
-Cover karke low flame par 25-30 minutes paka len.
-Cover hata kar mix karen, phir high flame par pakaen jab tak moisture khatam ho jaye. Dalchini aur bari elaichi nikal den aur mixture ko mukammal thanda hone den.
-Chopper mein daal ka mixture daal kar achi tarah chop karlen aur 15-20 minutes ke liye fridge mein rakh den.
-50g tikki mixture le kar cylinder shape ki tikki bana len aur side par rakh den (15-16 tikkis ban jati hain).
Assembling Anda Tikki:
-Griddle par cooking oil daalein, pyaz, tamatar aur hari mirchain daal kar mix karen aur medium flame par paka len.
-Thora thora pani daalte jayein.
-Lal mirch crushed, pink salt aur raita daal kar mix karlen.
-Thora sa cooking oil daal kar mix karen aur medium flame par 3-4 minutes paka len.
-Anday daalein, kuch seconds rest den phir mix karlen. Prepared tikki (2) daal kar mix karen aur medium flame par 1-2 minutes paka len.
-Hara dhania aur hari mirch se garnish karen, naan aur onion rings ke sath serve karen.
