Ingredients:
Prepare Chicken:
-Boneless Chicken (Preferably thigh) pieces 500g
-Mustard paste 1 & ½ tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Onion powder 1 tsp
-Paprika powder 1 tsp

-Lehsan powder (Garlic powder) 1 tsp
-Dried oregano 1 tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Lemon juice 1 tsp
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Maida (All-purpose flour) 1 Cup
-Anday (Eggs) whisked 2
-Breadcrumbs 1 Cup or as required
-Cooking oil ½ Cup
Prepare Hot Burger Sauce:
-Mayonnaise ½ Cup
-Sriracha sauce 2 tbs
-Lemon juice 1 tbs
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Iodized Himalayan pink salt to taste
-Pickled jalapenos chopped 1 tbs
Prepare Dough:
-Nachos chips 120g
-Bareek cheeni (Caster sugar) 2 tsp
-Khameer (Instant yeast) 2 tsp
-Doodh (Milk) warm ½ Cup
-Maida (All-purpose flour) sifted 2 & ½ Cups
-Dried oregano 1 tsp
-Iodized Himalayan pink salt 1 & ½ tsp or to taste
-Cooking oil 1 tbs
-Doodh (Milk) warm ¼ Cup
-Cooking oil 1 tsp
Assembling:
-Salad patta (Salad leaf)
-Cheese slice
Directions:
Prepare Chicken:
-In a bowl,add chicken,mustard paste,black pepper powder,onion powder,paprika powder,chicken powder,garlic powder,dried oregano,pink salt,lemon juice,red chilli powder,mix well & marinate or 1 hour.
-Now coat with all-purpose flour,dip into whisked eggs & coat with breadcrumbs.
-In frying pan,heat cooking oil (170C) & fry on low flame until golden brown (10-12 minutes).
Prepare Hot Burger Sauce:
-In a bowl,add mayonnaise,sriracha sauce,lemon juice,red chilli powder,pink salt,pickled jalapenos,whisk well & transfer to a squeeze bottle.
Prepare Dough:
-In a chopper,add nachos,chop coarsely & set aside.
-In a bowl,add caster sugar,instant yeast,milk & mix well,cover & let it bloom for 4-5 minutes.
-Add all-purpose flour,dried oregano,pink salt,chopped nachos (2 tbs),cooking oil & mix well,gradually add milk & knead until dough is formed.
-Grease with cooking oil,cover & let it proof for 1 hour (warm place).
-Knead dough again until smooth,take 50g of dough,make a ball & roll out with the help of rolling pin,apply cooking oil & coat one side with chopped nachos & apply cooking oil on another side then flip.
-Air fry at 170C for 4-5 minutes in a preheated air fryer.
Assembling:
-On buns,add & spread prepared sauce, place salad leaf,crispy chicken,cheese slice,prepared sauce & serve (makes 14).

-Ek bowl mein chicken, mustard paste, black pepper powder, onion powder, paprika powder, chicken powder, garlic powder, dried oregano, pink salt, lemon juice, red chilli powder daal kar achi tarah mix karein aur 1 ghanta marinate kar lein.
-Ab chicken ko all-purpose flour se coat karein, phir whisked eggs mein dip karein aur breadcrumbs se achi tarah coat karein.
-Frying pan mein cooking oil garam karein (170C) aur low flame par fry karein jab tak golden brown ho jaye (10-12 minutes).
Prepare Hot Burger Sauce:
-Ek bowl mein mayonnaise, sriracha sauce, lemon juice, red chilli powder, pink salt, pickled jalapenos daal kar whisk karein aur squeeze bottle mein transfer kar lein.
Prepare Dough:
-Chopper mein nachos daal kar coarsely chop karein aur side par rakh dein.
-Ek bowl mein caster sugar, instant yeast aur milk daal kar mix karein, cover karein aur 4-5 minutes ke liye bloom hone dein.
-Ab ismein all-purpose flour, dried oregano, pink salt, chopped nachos (2 tbs), cooking oil daal kar mix karein. Gradually milk add karte hue dough knead karein jab tak smooth dough ban jaye.
-Dough ko cooking oil se grease karein, cover karein aur 1 ghanta proof hone dein (warm jagah par).
-Proof hone ke baad dough ko dubara knead karein jab tak smooth ho jaye. 50g dough lein, ball banayein aur rolling pin se roll karein.
-Cooking oil apply karein aur ek side par chopped nachos coat karein, dusri side par bhi thoda oil laga kar flip karein.
-Air fryer mein 170C par 4-5 minutes preheated air fry me air fry karein.
Assembling:
-Buns par prepared sauce spread karein, salad leaf rakhein, crispy chicken, cheese slice aur phir thoda aur sauce daal kar serve karein (makes 14).
