Ingredients:

Prepare Yogurt Sauce:

-Dahi (Yogurt) ¾ Cup

-Cream 2-3 tbs Cup

-Podina (Mint leaves) dried & crushed 1 tsp

-Himalayan pink salt ¼ tsp or to taste

-Chaat masala ¼ tsp

-Kashmiri lal mirch (Kashmiri red chilli) powder 1/8 tsp

Prepare Malai Boti Skewers:

-Boneless mutton cubes 750g

-Adrak lehsan paste (Ginger garlic paste) 1 tbs

-Himalayan pink salt 1 & ½ tsp or to taste

-Meat tenderizer ½ tbs

-Dahi (Yogurt) thick ¼ Cup

-Cream 4 tbs

-Hari mirch (Green chilli) paste 1 tbs

-Dhania powder (Coriander powder) 1 tbs

-Zeera powder (Cumin powder) 1 & ½ tsp

-Safed mirch powder (White pepper powder) ½ tsp

-Garam masala powder 1 & ½ tsp

-Elaichi powder (Cardamom powder) ½ tsp

-Baisan (Gram flour) 1 tbs

-Kali mirch powder (Black pepper powder) 1 tsp

-Jaifil powder (Nutmeg powder) 1 pinch

-Lemon juice 1 tbs

-Hara dhania (Fresh coriander) chopped

 

Directions:

Prepare Yogurt Sauce:

-In a bowl,add yogurt,cream,dried mint leaves,pink salt,chaat masala,kashmiri red chilli powder,mix well & set aside.

Prepare Malai Boti Skewers:

-In a bowl,add mutton,ginger garlic paste,pink salt,meat tenderizer & mix well,cover & marinate for 2-3 hours.

-Add yogurt,cream,green chilli paste,coriander powder,cumin powder,white pepper powder,garam masala,cardamom powder,gram flour,black pepper powder,nutmeg powder,lemon juice & mix well,cover & marinate for 1 hour.

-Thread marinated mutton boti in wooden skewers.

-Set Dawlance microwave oven at convection/combi. & start preheating for 10 minutes.

-On oven safe plate,place oven grill,mutton skewers & place grill in preheated microwave oven.

-Bake at 180C on convection (C) mode for 15 minutes,turn sides,apply cooking oil & bake again for 15 minutes & grill for 5 minutes (makes 10-12 skewers).

-Drizzle prepared creamy yogurt sauce,sprinkle fresh coriander & serve with rice,naan & sautéed vegetables!
