Prepare Dough:

  • Atta (Wheat flour) sifted 2 Cups
  • Maida (All-purpose flour) sifted 1 Cup
  • Namak (Salt) 1 & ½ tsp
  • Baking soda 1 & ½ tsp
  • Sugar powdered 1 tbs
  • Ghee (Clarified butter) 3 tbs or as required
  • Dahi (Yogurt) whisked 4 tbs
  • Lukewarm water 1 Cup or as required

Prepare Potato Filling:

  • Aalo (Potatoes) boiled 4 medium
  • Pyaz (Onion) chopped 1 medium
  • Hari mirch (Green chillies) chopped 3
  • Hara dhania (Fresh coriander) chopped 2 tbs
  • Namak (Salt) 1 tsp or to taste
  • Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
  • Sabut dhania (Coriander seeds) crushed ½ tbs
  • Garam masala powder ½ tsp
  • Lal mirch (Red chilli) crushed 1 tsp
  • Ajwain (Carom seeds) ½ tsp
  • Anar dana (Dried pomegranate seeds) crushed 1 tbs
  • Lemon juice 1 & ½ tbs
  • Ghee (Clarified butter) melted 2-3 tbs or as required
  • Maida (All-purpose flour)
  • Salty water
  • Makhan (Butter)
  • Hara dhania (Fresh coriander)


Prepare Dough:

In a bowl,add wheat flour,all-purpose flour,salt,baking soda,sugar & mix well.

Add clarified butter & mix well.

Add yogurt and mix well until it crumbles.

Gradually add lukewarm water & knead until soft dough is formed.

Grease dough with ghee,cover & let it rest for 1 hour (warm place).

Prepare Potato Filling:

In a bowl,grated potatoes with the help of the grater.

Add onion,green chillies,fresh coriander,salt,red chilli powder,coriander seeds,garam masala powder,red chilli crushed,carom seeds,dried pomegranate seeds,lemon juice,mix well & set aside.

Knead dough again until smooth (3-4 minutes).

Sprinkle dry flour & divide into 2 portions.

Sprinkle dry flour & roll out with the help of rolling pin.

Add & spread clarified butter with the help of brush,sprinkle dry flour & roll out the dough.

Sprinkle dry flour and divide the rolled dough in 3 parts.

Take one part,sprinkle dry flour,press & spread it with the help of hands and roll out with the help of rolling pin.

Add prepared potato filling (1-2 tbs) in the center,lift up all the edges,press and seal the filling & make a dough ball.

Sprinkle dry flour & roll out dough with the help of rolling pin.

Apply salt water on one side of naan with the help of the brush.

Heat griddle,place naan (wet side down) & cook on low flame until it starts bubble & bottom turns brown then flip the griddle and cook other side directly on the flame until it is charred (makes 6).

Apply butter and sprinkle fresh coriander & serve with raita!
