Ingredients:

  • Beef qeema (Mince) hand chopped 750g
  • Adrak lehsan paste (Ginger garlic paste) 2 tbs
  • Kacha papita (Raw papaya) paste 1 & ½ tbs
  • Lemon juice 3 tbs
  • Dahi (Yogurt) ¾ Cup
  • Lal mirch powder (Red chilli powder) 2 tsp or to taste
  • Haldi powder (Turmeric powder) ½ tsp
  • Namak (Salt) 2 tsp or to taste
  • Tandoori masala 1 tbs
  • Lal mirch (Red chilli) crushed 1 tsp
  • Garam masala powder 1 tsp
  • Koyla (Charcoal) for smoke
  • Cooking oil ½ Cup
  • Pyaz (Onion) sliced 3 medium
  • Laung (Clove) 3-4
  • Badiyan ka phool (Star anise) 1
  • Zeera (Cumin seeds) ½ tbs
  • Badi elaichi (Black cardamom) 1
  • Hari elaichi (Green cardamom) 2
  • Tez patta (Bay leaves) 2
  • Tamatar (Tomato) chopped 2 medium
  • Hari mirch (Green chilli) 3-4
  • Podina (Mint leaves) chopped 1-2 tbs
  • Hara dhania (Fresh coriander) chopped 1-2 tbs
  • Podian (Mint leaves) chopped 1-2 tbs
  • Chawal (Rice) Sella ½ kg (soaked & boiled with salt until 3/4th done)

  • Cooking oil 2 tbs
  • Zarda ka rang (Orange food color) ¼ tsp
  • Doodh (Milk) ¼ Cup

Directions:

In a bowl,add beef mince,ginger garlic paste,raw papaya paste,lemon juice,yogurt,red chilli powder, turmeric powder,salt,tandoori masala,red chilli crushed,garam masala powder and mix well,cover & marinate for 1 hour in refrigerator.

Give coal smoke for 3 minutes & set aside.

In a pot,add cooking oil,onion & fry until golden brown.

Take out half quantity & reserve for layering.

In remaining fried onion,add cloves,star anise,cumin seeds,black cardamom,green cardamom,bay leaves & mix well.

Add tomatoes,mix well & cook until tomatoes are soft.

Add green chillies,mint leaves,fresh coriander & mix well.

Now add marinated mince,mix well & cook on medium flame for 14-15 minutes then cook on high flame until oil separates.

Take out half quantity in a bowl & reserve for layering.

In remaining mince,add fresh coriander,mint leaves,fried onion,half quantity of boiled rice,reserved mince,fresh coriander,mint leaves,remaining boiled rice & cooking oil.

In milk,add orange food color and whisk well.

Now add dissolved food color,fried onion,cover with kitchen towel & lid and steam cook on low flame for 14-15 minutes.

Serve with raita & salad.
