Ingredients:
-Saunf (Fennel seeds) 1 & ½ tbs
-Sabut dhania (Coriander seeds) 1 & ½ tbs
-Zeera (Cumin seeds) 1 tbs
-Jaifil (Nutmeg) ¼ piece
-Javitri (Mace) 1 piece
-Lehsan (Garlic) cloves 8-10
-Adrak (Ginger) sliced 2-inch piece
-Hari mirch (Green chillies) 6-7
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Water 4 tbs or as required
-Cooking oil 1 Cup or as required
-Chicken mix boti 750g
-Pyaz (Onion) sliced 3 medium
-Ghee (Clarified butter) 2-3 tbs
-Curry patta (Curry leaves) 10-12
-Darchini (Cinnamon sticks) 2-3
-Badiyan ka phool (Star anise) 2
-Badi elaichi (Black cardamom) 2
-Sabut kali mirch (Black peppercorns) 1 tsp
-Laung (Cloves) 4-5
-Hari elaichi (Green cardamom) 2-3
-Zeera (Cumin seeds) 1 tsp
-Tez patta (Bay leaf) 1
-Tamatar (Tomato) sliced 1 medium
-Dahi (Yogurt) whisked ½ Cup
-Himalayan pink salt ½ tbs or to taste
-Water 4 Cups
-Chawal (Rice) Sella 500g soaked for 2 hours
-Hari mirch (Green chillies) 2-3
-Pickled green chillies 4-5
Directions:
-In a spice grinder,add fennel seeds,coriander seeds,cumin seeds,nutmeg,mace & grind well to make a powder & set aside.
-In spice grinder,add garlic,ginger,green chillies,fresh coriander,mint leaves,water,grind well & set aside.
-In a cooking pot,add cooking oil,chicken,mix well & fry on high flame until golden & set aside.
-In same oil,add onion & fry on medium flame until golden.
-Turn off the flame & reserve ½ quantity of fried onion for garnishing & set aside.
-Take out excess oil (remaining oil approx. 4-5 tbs),turn on the flame,add clarified butter & let it melt.
-Add curry leaves,cinnamon stick,star anise,black cardamom,black peppercorns,cloves,green cardamom, cumin seeds,bay leaf & mix well.
-Add tomato,yogurt,green masala paste & mix well,cover & cook on low flame for 4-5 minutes then cook on high flame until oil separates.
-Add prepared spice mix,pink salt & mix well.
-Add fried chicken & mix well,add water,mix well & bring it to boil,cover & cook on low flame for 10-12 minutes.
-Add rice,mix well & cook on high flame until water is reduced (4-5 minutes).
-Add green chillies,pickled green chillies,cover with kitchen cloth & lid & steam cook on low flame for 10-12 minutes.
-Garnish with reserved fried onion & serve with salad & raita!

-Spice grinder mein saunf,sabut dhania,zeera,jaifil aur javitri dal kar achi tarah grind kar ke powder bana lein & side par rakh dein.
-Spice grinder mein lehsan,adrak,hari mirchein,hara dhania,podina aur pani dal kar achi tarah grind kar lein & side par rakh dein.
-Ek cooking pot mein cooking oil aur chicken dal ker tez ancch per golden ho janay tak fry ker lein & side par rakh dein.
-Usi oil mein pyaz dal kar medium flame par golden hone tak fry karein.
-Chulha band ker dein & fried pyaz ki half quantity ko nikaal kar garnishing kliya alag rakh lein.
-Zyada oil nikaal dein (remaining oil approx. 4-5 tbs) chulha on karein aur ghee dal kar melt ker lein.
-Curry patta,darchini,badiyan ka phool,badi elaichi,sabut kali mirch,laung hari elaichi zeera aur tez patta daal kar achi tarah mix karein.
-Tamatar,dahi aur green masala paste dal kar mix karein aur dhak kar low flame par 4-5 minute pakaayein phir high flame per oil alag ho janay tak paka lein.
-Tayyar spice mix aur pink salt dal kar mix karein.
-Fried chicken dal ker ache sa mix karein,pani dal ker mix karein aur ubal anay dein aur dhak ker low flame par 10-12 minutes paka lein.
-Chawal dal kar mix karein aur high flame per pani reduce ho janay tak paka lein (4-5 minutes).
-Hari mirchein aur pickled green chillies dal kar kitchen cloth aur lid se dhak dein aur halki ancch per 10-12 minutes kliya steam cook ker lein.
-Reserved fried pyaz sa garnish karein,salad & raita ka saath serve karein!
