Ingredients:

Prepare Creamy Tikka Filling:

-Chicken boiled 500g

-Tikka masala 2 & ½ tbs

-Lemon juice 2 & ½ tbs

-Makhan (Butter) 2 tbs

-Cooking oil 1 tbs

-Pyaz (Onion) chopped 1 large

-Hari mirch (Green chilli) chopped 1 tbs

-Lehsan (Garlic) chopped 1 & ½ tbs

-Maida (All-purpose flour) 2 tbs

-Olper’s Milk ¾ Cup

-Lal mirch (Red chilli) crushed 1 tsp

-Zeera (Cumin seeds) roasted & crushed 2 tsp

-Paprika powder 2 tsp

-Himalayan pink salt 1 tsp or to taste

-Soy sauce 2 tbs

-Olper’s Cream ¾ Cup (room temperature)

-Hara dhania (Fresh coriander) chopped handful

Prepare Paratha Dough:

-Maida (All-purpose flour) sifted 500g

-Chakki atta (Wholewheat flour) sifted 1 Cup

-Himalayan pink salt 1 tsp

-Baking soda ½ tsp

-Sugar powdered 2 tbs

-Ghee (Clarified butter) 3 tbs

-Olper’s Milk warm 1 & ½ Cup

-Cooking oil 1 tsp

-Ghee (Clarified butter)

-Hari mirch (Green chilli) chopped

-Hara dhania (Fresh coriander) chopped

-Cooking oil 1 tbs or as required

 

Directions:

Prepare Creamy Tikka Filling:

-In a chopper,add chicken,tikka masala,lemon juice,chop well & set aside.

-In a wok,add butter,cooking oil & let it melt.

-Add onion,green chilli,garlic,mix well & sauté for 2-3 minutes.

-Add all-purpose flour & mix well.

-Add milk,red chilli crushed,cumin seeds,paprika powder,pink salt,soy sauce,mix well & cook until it thickens.

-Turn off the flame,add cream & mix well.

-Add chopped tikka chicken,fresh coriander,turn on the flame,mix well & cook on low flame for a minute.

-Let it cool.

Prepare Paratha Dough:

-In a bowl,add all-purpose flour,wheat flour,pink salt,baking soda,sugar & mix well.

-In another bowl,add clarified butter & whisk well until it changes color.

-Add clarified butter in flour & mix well until it crumbles.

-Gradually add milk,mix well & knead until dough is formed.

-Grease dough with cooking oil,cover with cling film & let it rest for 1 hour.

-Take a small dough (140g),make a ball & spread with hands then roll out with the help of rolling pin.

-Add & spread clarified butter & sprinkle all-purpose flour.

-Cut the dough in half,roll up & press gently.

-Sprinkle dry flour & roll out with the help of rolling pin.

-Add & spread prepared creamy tikka filling on one rolled dough,add green chilli,fresh coriander & flip another rolled dough on it,press & seal the edges then cut it with the help of 6 inches round dough cutter.

-Place plastic sheet & paratha & layer all parathas on each other with plastic sheet in between.

-Can be stored (Ziplock bag) in freezer for up to 2 months.

-On heated griddle,add cooking oil & fry frozen paratha on low flame from both sides until golden brown & apply cooking oil in between (makes 10).

How to use Homemade Frozen Paratha:

-Preheat griddle & ad oil/butter.

-Don’t defrost frozen paratha, directly place on griddle.

-Fry from both sides until golden & crispy.
