Doner Shawarma with DIY Homemade Doner Shawarma Grill

Ingredients:

Prepare Shawarma Chicken:

  • Chicken fillet 1 kg
  • Lal mirch powder (Red chilli powder) 1 tbs or to taste
  • Namak (Salt) 1 & ½ tsp or to taste
  • Kali mirch powder (Black pepper powder) 1 & ½ tsp
  • Lehsan powder (Garlic powder) 1 & ½ tsp
  • Zeera powder (Cumin powder) 1 & ½ tsp
  • Dried thyme 1 tsp
  • Dried oregano 1 tsp
  • Lemon juice 3-4 tbs
  • Cooking oil 2-3 tbs
  • Aloo (Potato) half
  • Cooking oil
  • Charcoal briquettes as required
  • 16kg empty ghee container

Yogurt Sauce:

  • Dahi (Yogurt) thick & whisked 1 Cup
  • Mayonnaise ¼ Cup
  • Kali mirch powder (Black pepper powder) pinch or to taste
  • Namak (Salt) ¼ tsp or to taste
  • Lehsan powder (Garlic powder) ½ tsp
  • Lemon juice 1-2 tbs

Assembling:

  • Pita bread grilled
  • Yogurt sauce
  • Prepared Shawarma Chicken
  • Band gobhi (Cabbage) shredded
  • Tamatar (Tomato) julienne
  • Shimla mirch (Capsicum) Julienne
  • Hari mirch (Green chilli) Pickled
  • Salad patta (Lettuce leaves)
  • Yogurt sauce

Directions:

Prepare Shawarma Tandoor:

Prepare shawarma tandoor as described in video.

Prepare Shawarma Chicken:

On a clean cutting board cut each chicken breast into four portions & set aside.

In a bowl add red chilli powder, salt, black pepper powder, garlic powder, cumin powder, dried thyme, dried oregano, lemon juice, cooking oil & mix until well combined.

Add chicken fillets, mix & rub evenly, cover & marinate overnight.

On a BBQ skewer, skew a potato, marinated chicken fillets and skew another potato on top.

Now turn the skewer upside down & arrange the fillets & set aside.

Add light charcoals in grilled section of tandoor and let it heat for 15-20 minutes.

Place chicken shawarma seekh in front of lit charcoal & keep rotating it for over grilled from all sides (apply oil in between).

When chicken is done, cut it with the help of knife & set aside.

Yogurt Sauce:

In a bowl,add yogurt,mayonnaise, black pepper powder, salt, garlic powder, lemon juice and whisk well. Transfer to a squeeze bottle then set aside.

Assembling:

On a grilled pita bread, yogurt sauce, prepared chicken, cabbage, tomatoes, capsicum, pickled green chillies, salad leaves, yogurt sauce, roll it & wrap it in butter paper. Cut them & serve!
