Ingredients:

  • Falak Extreme Basmati Rice 500g
  • Water as required
  • Water as required
  • Namak (Salt) 1 & ½ tbs or to taste
  • Badiyan ka phool (Star anise) 1
  • Tez patta (Bay leaves) 2
  • Laung (Cloves) 3-4
  • Lemon juice 1 tbs
  • Cooking oil 1 tbs
  • Pyaz (Onion) fried 1 Cup
  • Tamatar (Tomato) sliced 1 medium
  • Hari mirch (Green chillies) 6-7
  • Aalo bukhara (Dried plum) 4-5
  • Podina (Mint leaves) 1 Cup
  • Hara dhania (Fresh coriander) ½ Cup
  • Biryani masala 1 tbs
  • Lemon juice 1 tbs
  • Cooking oil 1/3 Cup
  • Pyaz (Onion) sliced 1 medium
  • Sabut kali mirch (Black peppercorns) 1 tsp
  • Zeera (Cumin seeds) 1 tsp
  • Darchini (Cinnamon sticks) 2
  • Badiyan ka phool (Star anise) 1
  • Laung (Cloves) 3-4
  • Hari elaichi (Green cardamom) 2
  • Badi elaichi (Black cardamom) 2
  • Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
  • Tamatar (Tomato) sliced 1 large
  • Dhania powder (Coriander powder) 1 & ½ tbs
  • Namak (Salt) 2 tsp or to taste
  • Lal mirch powder (Red chilli powder) 2 tsp or to taste
  • Haldi powder (Turmeric powder) ½ tsp
  • Garam masala powder 1 tsp
  • Water 2 Cups
  • Aalo (Potatoes) peeled & large cubes 2 medium
  • Dahi (Yogurt) whisked ½ Cup
  • Chicken mix boti 750g
  • Zarda ka rang (Orange food color) ½ tsp
  • Kewra water 1 tbs
  • Cooking oil 3 tbs

Directions:

In a bowl,add basmati rice,water,wash thoroughly and soaked for 30 minutes then strain soaked rice & set aside.

In a pot,add water & bring it to boil.

Add salt,star anise,bay leaves,cloves,lemon juice,cooking oil & mix well.

Add soaked rice,mix well & boil until 3/4th done then strain & set aside.

In a bowl,fried onion,tomato,green chilies,dried plums,mint leaves,fresh coriander,briyani masala, lemon juice,mix well & set aside.

In a pot,add cooking oil,onion & sauté until translucent.

Add black peppercorns,cumin seeds,cinnamon sticks,star anise,cloves,green cardamom,black cardamom & mix well.

Add ginger garlic paste and mix well.

Add tomato,mix well & cook until soft (2-3 minutes).

Add coriander powder,salt,red chilli powder,turmeric powder,garam masala powder & mix well.

Add water & mix well.

Add potatoes,mix well and bring it to boil,cover & cook until potatoes are half done (5-6 minutes).

Add yogurt & mix well.

Add chicken,mix well and cook on medium flame until water is reduced (8-10 minutes).

Add orange food color & mix well.

Add & spread tomato & onion mixture,boiled rice,kewra essence and cooking oil,cover & cook on high flame for 4-5 minutes then steam cook on low flame for 8-10 minutes.

Mix rice & serve with salad & raita!
