-Sabut kali mirch (Black peppercorns) 1 & ½ tsp

-Saunf (Fennel seeds) 1 & ½ tsp

-Sabut dhania (Coriander seeds) 1 tbs

-Zeera (Cumin seeds) 1 tbs

-Sabut lal mirch (Button red chillies) 8-10

-Kashmiri lal mirch (Kashmiri red chillies) 2

-Lehsan (Garlic) cloves 4-5

-Adrak (Ginger) 2-inch piece

-Hari mirch (Green chillies) 6-7

-Imli pulp (Tamarind pulp) 2 & ½ tbs

-Dahi (Yogurt) 1 Cup

-Haldi powder (Turmeric powder) 1 tsp

-Namak (Salt) 1 tsp or to taste

-Jaifil powder (Nutmeg powder) ¼ tsp

-Javitri powder (Mace powder) ¼ tsp

-Lemon juice 3 tbs

-Chicken mix boti 750g

-Olper’s Tarrka Desi Ghee ½ Cup

-Pyaz (Onion) sliced 1 large

-Curry patta (Curry leaves) 18-20

-Podina (Mint leaves) chopped 1-2 tbs

-Hara dhania (Fresh coriander) chopped 1-2 tbs

-Hari mirch (Green chillies) 2

-Chawal (Rice) Sella ½ kg (boiled with salt & whole spices)

-Pyaz (Onion) fried 1-2 tbs

-Zarda ka rang (Orange food color) ½ tsp

-Olper’s Tarrka Desi Ghee 1-2 tbs



-In a frying pan,add black peppercorns,fennel seeds,coriander seeds,cumin seeds,button red chillies,Kashmiri red chillies & dry roast until fragrant (2-3 minutes).

-Let it cool.

-In mortal & pestle,add roasted spices & crush well.

-Add garlic,ginger,green chillies & crush coarsely.

-Add tamarind pulp & crush well.

-You can use grinder/spice mill to grind the mixture.

-Take out in a bowl,add yogurt,turmeric powder,salt,nutmeg powder,mace powder,lemon juice & whisk well.

-Add chicken & mix well,cover & marinate for 1 hour.

-In a pot,add desi ghee & let it melt.

-Add onion & fry until light golden.

-Add curry leaves & mix well.

-Add marinated chicken,mix well & cook on medium flame for 2-3 minutes,cover & cook on low flame for 12-15 minutes then cook on high flame until oil separates.

-Add mint leaves,fresh coriander,green chillies,boiled rice,mint leaves,fresh coriander,green chillies, fried onion,orange food color & desi ghee,cover with kitchen cloth & lid and steam cook on low flame for 10-12 minutes.

-Mix well & serve!
